I made a theme for this that I plan on releasing once Winterboard is compatible with 4.0. Simply activate asnd then you will have the original Wallpapers and multitasking from beta 1.
iPhone 3G 4.2.1 - iPod touch 3G 5.0 Beta 1
Windows 7 - OS X 10.5.6

The i4 UI is totally different from the 3g/3gs. They are still searching and looking in it.
