Im Editing it through Settings/General/Network/Cellular Data Network
All fields are Editable. I havnt looked at the plist file (didnt think I would have too)
If thats the only way, where do I find the plist file, and what needs to be changed under O2 carrier?iPhone 3G Jail broken 4.2.1 - redsn0w

Try this:
Open in safari:
.mobilconfig Generator by iPhone-notes.de
Edit you APN settings, download, install and reboot the phone.
After that the settings will be save, you can edit them if it is necesary.
Sorry for my poor english.
