Default Text Reader for Cyberduck/SSh for mac?

I want to edit the strings on my iPhone (3g - 2.2.1) and have located where i believe you can edit the strings. I want to be able to read whats in the phone and tried using word but i wasn't in the right format. I ssh into my iPhone with cyberduck. I use this file path...

    System/Library/CoreServices/Springboard.app/English.lproj

and inside that is a file called: SpringBoard.strings

I would like to be able to read that strings file. If anyone knows how to read that file it would be much appreciated if I was let in on that little old secret. Cheers!

I have tried using text edit, but I just get a mess of words and symbols.
