Still works on v2.2: instead of going to /private/var/root/Library/Preferences/com.apple.springboard.plist you will find the correct plist in /private/var/mobile/Library/Preferences/com.apple.springboard.plist

You'll need the beejive identifier (something like com.apple.beejive) which you'll find in the beejive.app folder in Info.plist.

For conversion of plists, you can use the Windows tool pledit or the iPhone utility plutil (the latter is part of Erica Utilities, via Cydia). The forums have additional information if you need it.
