Umm not quite what's going on... He has rouge processes that appear to be running when they shouldn't be... Nothing to do with applications staying open.
-I still think a quick restore and don't restore your back up should fix your problem there. Then use iLiberty to Jailbreak & etc.
I'm with killroy007, you may just have WAY to many apps. Have you move all your apps to the second partition? I noticed that before I moved mine I appeared to loose performance and the phone would heat up more even when in stand-by because of the extra resources needed to run the springboard alone.
-So once you have done your restore, install Cydia (apptapp.saurik.com -> make sure its from the source given and not a payload!) and it will automatically move your apps to the larger partition, allowing for more processing room. And only install app as you need then or use them.
