I finally figured out exactly how to set
a custom away message in MobileChat 2.23-2

TUTORIAL:

All you need for this is WinSCP

first go to /Applications/Chat.app/English.lproj
you will find a strings file called Localizable.strings
inside the file it will say
"I am away from my iPhone right now." = "I am away from my iPhone right now."
change the red part to whatever you want your away message to say

save the file and copy it into a folder on your computer
then copy the file back into the iPhone

overwrite the original file and next time you
start MobileChat and set it to away, it will
say what you set your away message to

you may need to reboot your phone
just turn it off and on if it doesnt work
just by restarting your springboard
