They're not actually stored on the phone as individual files. They're merged into one database file that can't be read or decrypted on a computer as far as I know... I think CopyTrans or something like that might be able to pull them

    Default the actual location

Sorry to wake an old thread, but nobody ever accurately answered this.

All the photos that are not in the camera roll are located in the file

    /private/var/mobile/Media/Photos/Photo Database

That is sadly not a folder full of jpeg files, it is a single database file (as has already been pointed out in this thread)

At least that is where it is located on my 3.1.3 phone. I can't confirm whether the location is the same for 4.0 firmware.

I haven't found any utility yet that allows me to extract JPG files from the Photo Database file. (though I see no obvious reason why one couldn't exist)

I just registered here to say thanks! I couldn't find this answer anywhere! Oh and the photo library is still located there on iOS 4.1.

I will add that if you have video synced you can retrieve them from:
    /private/var/mobile/Media/Photos/Videos/[YEAR]/[MONTH]/[DAY]/

Also, you can at least salvage any thumbnails which are actually fairly good size from:
    /private/var/mobile/Media/Photos/Thumbs/
