Default Editing File on my iPod Touch

Alright. So I want to edit files on my 2g iPod Touch MC version useing 4.1 firmware. I have tried ifile on my iTouch but a majority of the time it pops up saying "The operation couldn't be completed. (Cocoa error 513.)" I'v looked around on Google for this and as far as I can tell its due to the permissions of the file I'm trying to edit. I then tried OpenSSH I had that working for awhile but now I cant connect to my iPod useing FileZilla and WinSCP. With WinSCP it just says "Error server unexpectedly closed" and withe FileZilla it says:

    Response: fzSftp started
    Command: open "[email protected]" 22
Error: Server unexpectedly closed network connection
Error: Could not connect to server
    Status: Waiting to retry...
    Status: Connecting to 192.168.0.109...

Alot of the other USB programs like iPhone Explorer and Disk Aid show me some of the folders but those normally are only media areas likes Books, DCIM, and the Music area. But not other folders like var or applications.

Bump. I tried Ifunbox as well but it didn't work. I have also tried Netatalk. It shows up on my dads Mac but it works about the same as Ifile.
