Quick Questions!

Hey guys! two quick questions i need help with. I googled but weren't able to get any accurate answers.
1. whats the "iphone firmware" that is listed under the cydia packages? I know if i remove it something negative would happen but im curious at what purpose it serves. lol, stupid i know. Still curious though!
2. when you uninstall a application from cydia, does it leave leftover trash still on the phone, or does it wipe all info relating to that application out?
