I use iWork for all of my documents and presentations that I do, and I also use numbers for what I need to do. I dont use Office anymore. Handbreak as mentioned above is a biggie! I also use Bento for some database stuff. Aperture is good if you do a lot with photos, Cyber duck for all of my FTP needs and efax to receive faxes. Seashore for a few things it is free and I dont use it much but does what I need (it is like photoshop). I use skype as well which works great when on the road. I also use flip4mac and perian so that I can view all my media in quicktime instead of having a lot of media players.

Well, my favs are:
Burn- Simple and good CD/DVD burning software
Toast Titanium- A bit better burning soft and you can create your own DVDs

Here are several apps that I must have on my mac
First and MOST important
**Quicksilver-This app is an amazingly fast application launcher/tool that can do almost anything with the built in plug in support P.S. I use the HUD Bezel interface. Do a search for this app-it takes a little to get used to to use it effectively. For me it has almost completely replaced Spotlight, even in the default "key-launcher" -Command+Space.
Secondly I second 1Password it is an amazing tool
Thirdly I prefer to use the two programs VLC and Fairmount instead of MactheRipper or Handbreak.
Vlc-Is an all around video player that plays all kinds of formats
Fairmount allows you to put a DVD in and then just drag the Video_TS folder to your HDD for later viewing.
