I used to have this great set-up -- using my ATT iPad sim in my iPhone for a data-only iPhone. Used google voice and skype. Perfection.
Then google voice started to get jinky and I was losing messages. So I went back to regular.
Now I'm getting pissed at the monthly fees and want to get back to my original set up.
But I'm hearing that it's hard to jailbreak 5.1 with firmware 04.12.01.
I've also heard that I don't have to unlock the phone to do this?
Does anyone have any suggestions?

Update to 5.1.1, it doesn't update the baseband and it can be jailbroken using Absinthe or the most recent public redsn0w. From there, you can find ways to change the APN that way. Be it with CommCenterClassic patches or other tools. You don't have to unlock to do this.
The other way is to use a signed mobileconfig file (best to use iPhone Configuration Utility and make one yourself with the correct APN input) and install it into your phone. That should work for stock iOS firmwares, presumably including the upcoming iOS6, and jailbroken setups.Member of the hackint0sh forums.

If u have shsh you can go back anytime with i4 and baseband is relavant with att sim.
