I use "iRecorder Pro - Pocket Voice Recorder". It cost $0.99. What I really like about this application is it ability to WiFi sync to transfer recordings.

I use iDicto, i believe it's 0.99

I got it when it was free for a couple days. It has a really nice interface and it's easy to use! Very reliable, I used it to record 50 minute lectures all the time last semester.
