I'd like to have a simple button on my springboard (not sbsettings) that will toggle my wifi on and off. anything like that available?

Yes there is a Wifi Toggle in Cydia.

**Side Note** There is also a bluetooth toggle

For the Wifi Toggle you need to have an "iPhone Firmware < 2.2"
I guess i should have stated that I was already on 3.00
