For the same reason you text them now.
It would also be great for texting while driving, it would be a lot safer for the driver and every other person on the road.
My main reason for texting is because when I call someone I usually engage in a long conversation... and phone calls require almost full attention whereas texting takes a couple of seconds and bam! you can get back to what you're doing.

There's a service called JOTT. It used to be free when they started. But not anymore. Basically, you call Jott, tell them who you want to text, then say the text. This sends a text to the recipient. Worked pretty well when I tried it.

Text 2 Speech
txt-2-speech is an accessibility program mostly for persons who are blind or have low-vision. This technology is available; I believe AT&T owns the voices and MS the speech engine . . . and developers pay through the nose to put into programs . . . consumer, handicapped or not pay through the nose for it.
"speech to text" or Speech recognition is a productivity program. Dragon Naturally Speaking has the rains of this horse I believe. Again expensive technology that developers must pay licensing on and pass on to customers.
Some people really benefit from these technologies as they enable vision impaired persons and other to reach goals they might otherwise not reach.

Has anyone seen Talktome for Android?
TalkToMe Keyboard v1.0.1 Application for Android | Tools
It's pretty amazing I have to admit, I was using it on my friend's Droid yesterday. Whenever the keyboard pops up, there's a microphone button included, letting you speak into ANY field in which you can type. It's pretty impressive. Let's you search the entire phone, send texts and email, basically do literally everything by voice. Why doesn't the iPhone have anything even remotely comparable to this?
Did I mention it's free?

I just got dragon the other day. Haven't really used it much yet. What I'd really love to see is somthing like a voice activation program. My friend has voice activation lights in his house. You have to say "Computer, On" or High, Low, or w/e. it would be sweet to be able to train and just be able to say, "iPhone, text" or SMS, and it will open messaging. "iPhone, email" and it goes to email. Etc. Way I see it, if your fingers are greasy from eating already, you still have to click, slide, click, click, just to get a program and open things up. :-) I know I dream a big dream.
