1. After doing a quick scan of all the exercises, I counted about 60 built-in that were machines. Some used the same machine for different muscles (cable machine used for tricep pulldowns, chest, shoulders). This was counting ab exercises that use a bench, not necessarily an ab machine (8 ab exercises that use a bench/roman chair).
2. It's really easy to add a custom exercise, it takes 4 taps from starting the app to adding a new exercise, then you can customize all the options for that exercise. It even lets you duplicate an existing exercise and customize it.
One thing to note, at this point I don't see a way to add a picture of a custom exercise (this feature might be coming, not sure). The custom exercises show up in the exercise list like the built-in ones, except the custom ones don't have a picture.
I haven't tried the other fitness apps, but one thing I really like about iStayFit is how easy it is to quickly enter a set while working out. I found the program to be very intuitive, and figured it all out without having to read a manual/instructions. Also, one thing to note, the developer is very responsive and has always gotten back to me within 24 hours, so I'm sure if you email him, you'll get an answer quickly.
