iOS hackers MuscleNerd and planetbeing have both confirmed that the public release of iOS 6.1 is jailbreak safe! The update is vulnerable to all of the vulnerabilities that the hackers had planned on using to jailbreak iOS 6.1. That being said, update away! (Through iTunes)
According to planetbeing, while the firmware can be jailbroken, it's going to take a little while to get everything all polished up, bug free, and get a jailbreak method that can be released to the public:

If you’re excited to jailbreak your iOS 6.1 devices, the good news is it’s only a matter of time now. The jailbreak will include 22 different variants of iOS devices, including Apple’s new iPhone 5, iPod touch 5G, iPad (fourth generation), and iPad Mini. It will also include older iOS devices that can run iOS 6.1, excluding the Apple TV 3, for now. You can view our post to see the full list of supported devices.
