All right, folks, I just watched the Welcome video, and took notes. Here's the info you may not have already known... with pictures!
To completely turn off the iPhone, you hold down the Sleep/Wake button on the top right of the phone for a few seconds, and you get this screen, where you can slide to power off.
Here's a good view of the on-screen video controls, both in movies and in YouTube. The YouTube controls also include an "Email to friend" icon which brings up an email with a link to that video.

Pressing configure while in iPod mode brings up this screen, which allows you to choose the bottom 4 icons you see while in iPod mode. Maybe you want Podcasts there instead of Playlists, etc...
The mic is pretty nifty, allowing you to press the button once while listening music to pause, and tap twice to resume. When a call comes in, the song will fade out as the ringtone fades in. Pressing the button after the call fades your music back in.
These are the options you get when you press the options button on a photo.
This is the confirmation screen when you set a photo as a specific contacts picture id.
When in Safari, you can click New Page to have multiple pages open. This is the initial screen you see, you can click New Page in the bottom left to start another page...
Pressing Edit while in Mail brings you to the Edit Mode, where you can press the red button to the left of a message to delete it. You can also slide your finger to the right on any message in regular Mail mode to bring up the delete option.
SMS in the iPhone is easy, and appears just like an iChat conversation.
While in Google Maps, pressing the screen with two fingers zooms out, while pressing with one zooms in.
Google Maps also allows you to have bookmarked areas such as home, work, etc, similar to how Google Earth allows you to.
Maps also gives you an up to date traffic view.
Google Maps gives directions as well, with turn by turn specifics.

You have to love Apple, always elegant - even in the execution of a landmark product rollout.

If you watch closely, as Engadget pointed out, emails seem to support MS Office documents and PDFs as well
Yes they do, although still no word on whether you can actually edit those documents, or if its read-only...
I'm guessing for the time being, it will be read only. And I love the power off method.
